How to make it

  • Cook beef and onion until meat is done.
  • Drain meat well.
  • Add enchilada sauce and tomato sauce to the meat.
  • Cook about 10 minutes, until slightly thickened.
  • Spoon beef/sauce mixture into a 3 qt. baking dish.
  • Arrange whole tortilla chips (standing up) around the outer edge of the dish. Overlap them a little as you go around.
  • Slightly crush the remaining chips and put on top of meat mixture.
  • Sprinkle cheese on top of the crushed chips.
  • Bake 20 minutes or until hot and bubbly.
  • We serve with remaining bag of tortilla chips.
  • *To save time, prepare meat mixture ahead of time and refrigerate. When ready, spoon into baking dish, add tortillas and cheese and bake, but increase baking time to 30 minutes.
