My step father and his Dad use to make this every year. After the big Frazer River raft race. They were called the Turkeys, Hence the name

Ingredients
  • 1 fresh whole salmon (note: this would be roughly a 15 lb to 25 lb fresh salmon) (preferred) frozen if have too. Adjust weight to amount you can get.
  • 3 cups rice, semi pre cooked
  • 2 cans of corn
  • 4 tbs butter
  • salt and pepper to taste
  • Aluminum foil

Directions
  1. If using fresh salmon, cut head and tail fin off. Fill cavity with rice, corn, butter and salt n peper. Wrap in foil and put on BBQ for about 30 to 35 mins. or until completely cooked.
  2. Can also bake in oven. Have never tried this myself.

Well, there was usually an army at the house at the time lol. You can also use the leftovers in a sea food chowder.
