Ingredients
  • 2 (1 lb) pork tenderloins
  • 6 tblspns of dry oregano
  • 3/4 cup of olive oil
  • 6 cloves of sliced garlic
  • 1 1/2 cups of fresh lime juice
  • 2 tspns of salt

Directions
  1. With a large resealable plastic bag. Mix in the olive oil, lime juice, garlic, oregano, and salt. Seal the bag and shake until ingredients are well mixed. You should test taste the marinade for tartness. Add a little more oil if its too tart. Add more lime if its not enough zing. The garlic and salt flavors should also be noticable, but not too overwhelming. Next Place the tenderloins in the bag, seal it, and turn to coat. Let it marinate in the refrigerator for 2 to 5 hours.
  2. Preheat the grill to medium heat.
  3. Oil the grate lightly. Pour out the marinade. Grill the tenderloins for approximately 20 to 30 minutes, and then turn it once, or to desired doneness.
