How to make it

  • Heat half the olive oil over low heat.
  • Add the garlic and cook until well browned but not burnt.
  • Add the thyme, beans, tomatoes then season lightly with salt and pepper.
  • Cook on low heat, stirring as necessary to prevent sticking until the mixture has stopped boiling and started to fry, about 20 minutes.
  • Finish seasoning the beans and add the rest of the oil and a good squirt of lemon juice.
  • Serve as you see fit, with bread, on top of pasta as a light second course…
