Ingredients
  • 2 cups self rising flour
  • 1 tsp apple pie spice
  • 6 tbsp sugar
  • 1/2 cup candied cherries, quarters
  • 2 tbsp orange marmalade
  • 2/3 cup skim milk
  • 4 tbsp margarine
  • marmalade to brush

Directions
  1. Preheat oven to 400 degrees. Lightly grease a 12 cup muffin pan.
  2. Mix together flour and spice, stir in sugar and cherries.
  3. Mix the marmalad with milk and beat into the dry ingredients with the margarine. Spoon into muffin tins.
  4. Bake 20-25 minutes, or until golden brown.
  5. Turn out onto a wire rack and brush with warm marmalade.
