Mexican Crumble Cookies Recipe
Anyone who lives in South Texas is familiar with this popular Mexican cookie that can be bought at any Mexican Bakery. It is crumbly, and it has a "melt in your mouth" cinnamon flavor. These are authentic. You can't eat just one.

Ingredients
  • 2 cups all purpose flour (not self-rising)
  • 3/4 cup sugar
  • 1 cup shortening
  • 1 cup finely chopped pecans
  • 1 Tbsp cinnamon
  • 1 Tbsp anise seeds grinded

Directions
  1. Heat oven to 350 degrees
  2. Mix flour, sugar, cinnamon, and anise seeds together in large bowl.
  3. Add shortening. Mix until everything comes together. You should have a rough mixture.
  4. Add pecans.
  5. Now, work the mixture by hand until it becomes a dough. It will take a while for this to happen.
  6. Separate the dough into 2 balls.
  7. Form the dough into rolls about 1 1/2 to 2 inches in diameter
  8. Slice dough into 1/2 inch size cookies.
  9. Place on cookie sheets. Don't worry about placing them too close together as the dough will not expand.
  10. Bake for 8 -10 minutes. Watch closely. When the bottoms look slightly brown, they are ready. The tops of the cookies will not change color very much.
  11. Allow to cool completely. If you try to remove them too soon, they will literally disintegrate.
  12. In separate bowl mix some sugar with some cinnamon.
  13. Carefully remove the cookies with a spatula. Coat them with the sugar mixture.
