Onion And Pepper Soup Recipe
ONION AND PEPPER SOUP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Raymond Estate in Roanoke Texas in 1994.

Ingredients
  • 1 large white onion
  • 3 medium bell pepper
  • 2 ounces butter
  • 3 tablespoons tomato puree
  • 1-1/2 pints beef stock
  • 1 teaspoon salt
  • 2 teaspoons freshly ground black pepper

Directions
  1. Chop onion finely.
  2. Remove pith and seeds from peppers then cut into thin strips.
  3. Melt butter then add onions and peppers and cook gently until soft.
  4. Add stock and bring to a boil.
  5. Add tomato puree, salt and pepper then simmer to desired consistency.
  6. Let soup cool then puree some of the soup using a liquidizer.
  7. Pour pureed soup back into pan with the rest and reheat to serve.
