How to make it

  • whisk egg and 2 tbsp of water together
  • sprinkle some salt and black pepper onto pork chops and beat them with the tenderizing mallet on both sides
  • heat your favorite cooking oil in a thick bottom skillet over medium high heat
  • dip each pork chop in egg mix, then breadcrumbs
  • fry chops 2-3 minutes on each side, until crumbs are pleasantly golden-brown
  • remove chops from skillet and place into a baking dish
  • heat the oven at 375
  • meanwhile, slice the onion and saute in the skillet where chops were cooking before, until translucent and fragrant
  • add in mushrooms
  • sprinkle some salt and pepper over mushrooms
  • add in parsley - about 1 tbsp
  • saute until all wilted and brown - about 3-4 minutes
  • fold onions and mushrooms out onto chops in the baking dish and distribute evenly
  • cover everything in layer of condensed mushroom soup
  • bake for about 25 minutes
  • serve with sauteed spinach, green beans, or green peas

    Aren't those Campbell "Cream Of" soups wonderful? I'm a mashed potato fiend, so out of the oven I would pop the meat out of the pot and cook in some flour shaken in cold water and make a ton of gravy.
    I like the sound of mushrooms with pork. Thanks for the great post.
