How to make it

  • Put the frozen spinach block into a pan of hot tap water. Let it sit while you do the other things.
  • Cut the bacon strips into 1-inch pieces. In a medium fry pan, fry the bacon until nearly done the way you like it. Add the garlic and fry until the bacon is nicely done. Don't drain the bacon grease.
  • Remove the partially frozen block of spinach from the water. Cut it into 2-inch squares and add to frypan.
  • Add the can of tomatoes and the liquid. Stir well. Increase heat to boiling, then reduce heat to simmer. Let simmer for 5 minutes. Stir occasionally
  • Add cream. Simmer, stirring often, until thickened the way you like it.
  • Season to taste with salt and pepper.
  • I like this with rice. Fine side for a pot roast.
