Beef Vegetable Cabbage Soup Recipe
This is our favorite beef cabbage vegetable soup, and it's really easy to make. Even my cabbage hating husband goes back for seconds, and that's saying something! Great with warm crusty bread or biscuits.

Ingredients
  • 1 46 oz can of tomato juice (like V8)
  • 1 46 oz can of water (plus 2 cups, for more broth)
  • 1/2 onion, diced
  • 2 carrots, sliced
  • 4 potatoes, cubed
  • 1 1/2 cups frozen corn
  • 1 can of green beans (or fresh or frozen)
  • about 1/2 head of cabbage, sliced sort of thinly
  • 1 1/2 lbs package of stew beef , cut into bite size pieces
  • 8 beef bouillon cubes
  • 4 cloves of garlic
  • salt and pepper to taste

Directions
  1. In a large pot, add the juice and water.
  2. Then add the onion, garlic, carrots, potatoes and cabbage.
  3. Bring to a boil, then simmer for 35 minutes.
  4. Add the corn, green beans, beef chuck and beef cubes.
  5. Simmer for another 40 minutes or so, until beef is tender.
  6. Season with salt and pepper.

It would be good to braze the beef in 2 Tablespoons of Olive oil until browned first. 1 onion diced,3 stalks of celery choped.
