I made this salad up inspired by chunky style salad I tried once in an upscale deli. It works great on a pita, sourdough, or pumpernickel bread

Ingredients
  • 2 small cans of chunky style tuna in water
  • 3 large eggs
  • 1 small or 1/2 large yellow onion
  • 2 very full tbsp sweet relish
  • 1 small Granny Smith apple
  • 3 tbsp dried cranberries
  • 3 tbsp mayonnaise
  • 1 tbsp spicy or brown mustard
  • salt, pepper to taste
  • 1 tbsp lemon juice
  • 1 tsp parsley flakes
  • 1/4 tsp paprika

Directions
  1. Boil eggs for 10 minutes; cool, peel, and dice
  2. Drain the tuna water
  3. Toss tuna into a mixing bowl and break it down with a wooden spoon a little bit, creating large chunks
  4. Peel and core the apple, and grate it on a coarse grater; add to the bowl
  5. Finely chop the onion; add to the bowl
  6. Add the remaining ingredients and gently mix, taking care not to mash them
  7. Let it stand for 10-15 minutes in the fridge.

  9. Serve with fresh bread or on a leaf of lettuce
