Blackened Catfish Recipe
This is a pretty standard recipe but I love it so much, I had to post it.

Ingredients
  • 1 1/2 pound catfish cut into individual sizes
  • butter
  • olive oil
  • the blackened seasoning...
  • 2 tsp paprika
  • 1 tsp onion powder
  • 1/'2 tsp granulated garlic
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 1tsp thyme
  • 1 tsp oregano
  • 1/2 tsp cayenne
  • mix well

Directions
  1. dredge fish in the herb mixture and fry over medium-high heat 4 minutes on one side, flip and when the fish starts getting little glob of white junk and flakes well in the middle, its done.
  2. I like to make a milk gravy with the pan drippings and serve it on yams or sweet potatoes also.
