Killer Curry

- 1 cup uncooked rice shopping list
- 2 cups water or chicken broth or vegetable broth shopping list
- 1 can drained chopped tomatoes shopping list
- 1 cups frozen peas and carrots (or 1 can, drained) shopping list
- 1 cups frozen broccoli shopping list
- 1/2 cup raisins shopping list
- a couple handfuls cashews shopping list
- 1 small can crushed pineapple drained (optional) shopping list
- 1 can lite coconut milk shopping list
- 2 TBSP curry powder shopping list
- 1 tsp salt shopping list
How to make it
- Boil water or broth and add rice, reduce heat to low simmer and cover for about 20 minutes
- Place a collander in the sink and add all the vegetables and run cold water over them to thaw.
- When rice is fully cooked and soft and fluffy, put it in a large skillet and then add your veggies, coconut milk, and curry powder
- Turn heat to medium and let cook about 8 minutes or until heated all the way through.
- EAT!
