This is a quick and easy veggie curry dish, that is guilt free! You can be creative with it as soon as you have the basic idea down. I made some last week and added some leftover diced up pork roast. It rocked!

COCONUT MILK IS NOT FATTENING!!! People keep telling me that it is but it is only about 50 calories per serving if you use lite milk. Read the labels! Coconut CREAM is fattening. You can use any vegetable you want for this dish, the more colors the better but try not to let them cook too long or they will get mushy. You can add any type of curry powder you like, or curry paste, or garam masala. You can also add chopped cooked chicken or grilled/sauteed shrimp. Or use potatoes instead of rice. Have fun and be creative.

the key is to use about 4-5 cups canned or frozen (better) veggies (or you can roasted/steam your own of course!!) The more colors the better.
