How to make it

  • Boil water or broth and add rice, reduce heat to low simmer and cover for about 20 minutes
  • Place a collander in the sink and add all the vegetables and run cold water over them to thaw.
  • When rice is fully cooked and soft and fluffy, put it in a large skillet and then add your veggies, coconut milk, and curry powder
  • Turn heat to medium and let cook about 8 minutes or until heated all the way through.
  • EAT!
