Another recipe from a card file I haven't looked at in years! I can't believe I haven't been using these.

Ingredients
  • 1 sm orange, pith removed and cut into very small pieces
  • 1 16 ounce can of salmon
  • 1 medium onion, minced
  • 1 egg
  • 1 C soft bread crumbs
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • oil for sauteeing
  • Sauce
  • 1/4 C mayonnaise
  • 1/4 C plain yogurt
  • 2 Tbl orange juice

Directions
  1. Peel orange, making sure pith is removed and cut into small pieces
  2. Place orange in bowl
  3. Add salmon(removing any large bones) and next 5 ingredients
  4. Shape into 8 patties
  5. Saute in oil until golden on both sides
  6. Combine sauce ingredients and serve with salmon
