Cilantro Rice

- 2 tbls olive oil shopping list
- 1/4 cup cilantro Sofrito (jarred, find it at a mexican grocery or in the hispanic section at a general grocery) shopping list
- 1/4 cup chopped cilantro (about 1/2 bunch, I rip it off about where the leaves end) shopping list
- 1 1/2 cups medium grain rice shopping list
- 1 1/2 tsp salt shopping list
- water shopping list
How to make it
- Heat olive oil over medium heat on a large saucepan.
- Add sofrito and cilantro and saute, stirring constantly, until flavors are released.
- Add rice and mix well. Saute for about 2 minutes. Add salt.
- Add water to a level that's almost up to your first knuckle, I think that's about 1/2". Stir well.
- Bring to a boil. Reduce heat to low. Cover and cook for 15 minutes.
- Remove from heat and check rice texture - water should be absorbed and rice should be tender. Recover and let stand for 5 minutes before serving.
