Chicken with Lemon Baked

- 6 Tbsps. all-purpose flour shopping list
- salt and pepper to taste shopping list
- 1-1/2 tsp. onion powder shopping list
- 4 boneless, skinless chicken breast halves (at least 2 pounds) shopping list
- 2 Tbsps. vegetable oil shopping list
- 1 medium onion, chopped shopping list
- 1/2 celery rib, finely sliced/chopped shopping list
- 2-3 garlic cloves, finely chopped or minced shopping list
- 1 Tbsp. butter shopping list
- 1 cup chicken broth shopping list
- 1/4 cup white wine(optional) shopping list
- 3 Tbsps. lemon juice shopping list
- 2 tsps. dried basil shopping list
- 1/2 tsp. dried thyme shopping list
- lemon slices shopping list
- 2 Tbsps. fresh parsley, chopped shopping list
- Hot cooked egg noodles or rice, optional but adds the finishing touch. shopping list
How to make it
- Rinse and dry chicken with paper towels.
- In a shallow bowl, combine flour, salt, pepper and onion powder and coat chicken.
- Set aside remaining flour mixture.
- In a skillet, brown chicken in oil.
- Transfer to an ungreased 9 x 9 inch or a little larger baking dish.
- In a saucepan, saute onion, celery and garlic in butter.
- Add reserved flour mixture and stir to form a thick paste.
- Gradually add broth, lemon juice, basil and thyme and mix well.
- Bring to the boil.
- Cook for 2 minutes stirring constantly until thickened and bubbly.
- Pour over the chicken.
- Cover and bake at 350° for 30-40 minutes or until the juices run clear.
- Serve over egg noodles or rice if desired.
- Top each half with a couple of lemon slices and sprinkle with fresh chopped parsley.
- Serves 4
