Carrot Cake with Cream Cheese Frosting

- 3 cups grated carrots shopping list
- 2 cups cake flour shopping list
- 2 cups white sugar shopping list
- 2 teaspoons baking soda shopping list
- 1 teaspoon baking powder shopping list
- 1/2 teaspoon salt shopping list
- 2 teaspoon cinnamon shopping list
- 4 eggs shopping list
- 1 1/2 cups vegetable oil shopping list
- 1 1/2 teaspoons vanilla extract shopping list
- 1 8oz can crushed pineapple with juice shopping list
- 1 cup chopped pecans-optional shopping list
- Cream Cheese Frosting: shopping list
- 1 8oz package cream cheese shopping list
- 1 stick butter shopping list
- 1 teaspoon vanilla extract shopping list
- 4 cups confectioners' sugar shopping list
- 1 cup chopped pecans-optional shopping list
How to make it
- Preheat oven to 350 degrees.
- Grease and flour a 9" x 13" pan or three 9" round cake pans.
- Sift together flour,baking powder,baking soda,salt,and cinnamon. Set aside.
- In a large bowl, combine vegetable oil and sugar.
- Add eggs and vanilla.
- Stir in flour mixture. Mix well.
- Add carrots,pineapple,and nuts(if using).
- Pour batter into prepared pan(s).
- Bake 30-40 minutes or until inserted toothpick comes out clean.
- Cool completely.
- Frosting:
- Combine cream cheese,butter,vanilla and sugar.
- Beat until smooth and creamy.
- Fold in pecans(if using).
- Spread on cooled cake.
- Serve with whipped cream or vanilla ice cream.
