How to make it

  • Preheat oven to 350 degrees.
  • Grease and flour a 9" x 13" pan or three 9" round cake pans.
  • Sift together flour,baking powder,baking soda,salt,and cinnamon. Set aside.
  • In a large bowl, combine vegetable oil and sugar.
  • Add eggs and vanilla.
  • Stir in flour mixture. Mix well.
  • Add carrots,pineapple,and nuts(if using).
  • Pour batter into prepared pan(s).
  • Bake 30-40 minutes or until inserted toothpick comes out clean.
  • Cool completely.
  • Frosting:
  • Combine cream cheese,butter,vanilla and sugar.
  • Beat until smooth and creamy.
  • Fold in pecans(if using).
  • Spread on cooled cake.
  • Serve with whipped cream or vanilla ice cream.

    love love love carrot cake with cream cheese frosting ... thanks for what looks like an awesome recipe!! never tried with pineapple in it but I bet it's terrific, will try soon!
