Healthy low-carb crackers, what a great way to sneak in a vegetable with a kick of protein from almonds. This recipe is from the "scdrecipe_creators" Yahoo group web site.

Ingredients
  • 1 bag of baby spinach (pre-washed)
  • 3/4 cup almond flour
  • 3 cloves of garlic, minced
  • 2 Tbs ghee, butter or oil
  • 1 Tbs water
  • salt to taste

Directions
  1. Pre-heat the oven to 350F
  2. In a frying pan, add ghee/butter/oil, then add spinach, garlic, water and salt.
  3. Cover and cook until wilted
  4. Remove from heat, squeeze out excess water (mash it with a spoon over a sink or use a strainer), then place into a bowl and add the almond flour
  5. Mix well - food processor may assist with this step
  6. Spread onto a cookie sheet lined with parchment paper.
  7. It should be very thin, about 1/8"
  8. Bake for 25 min.
  9. Remove from the oven and carefully cut into small squares without lifting it from the sheet.
  10. Lower the oven to 170F and bake (dry) for about 60-120 minutes (when the crackers are crispy, they're done)
