How to make it

  • Season the rabbit with salt and pepper to taste and dust with flour. Heat the butter in a heavy skillet and sear the pieces.
  • Put them in a roasting pan.
  • In the same skillet, heat the olive oil and saute the onion, garlic, mushrooms and pancetta.
  • Add the rest of the ingredients and stir.
  • Pour the sauce over the rabbit, cover and braise for 45 minutes or until the meat is tender.

    You are right, rabbit is hard to find and rather pricey but, worth the hunt. (no pun intended)
