RABBIT IN WINE SAUCE

- 2 - 3 pound rabbits, cut into serving pieces shopping list
- 1 cup flour shopping list
- 2 tablespoon butter shopping list
- 1 cup chicken broth shopping list
- 2 tablespoon chopped pancetta (Italian bacon) shopping list
- 1 tablespoon olive oil shopping list
- 2 teaspoon minced garlic shopping list
- 1 small onion, sliced shopping list
- 1 cup mushrooms, quartered shopping list
- 1/2 cup red wine shopping list
- 1 teaspoon fresh tarragon shopping list
- 1 tablespoon tomato paste shopping list
- salt and pepper to taste. shopping list
How to make it
- Season the rabbit with salt and pepper to taste and dust with flour. Heat the butter in a heavy skillet and sear the pieces.
- Put them in a roasting pan.
- In the same skillet, heat the olive oil and saute the onion, garlic, mushrooms and pancetta.
- Add the rest of the ingredients and stir.
- Pour the sauce over the rabbit, cover and braise for 45 minutes or until the meat is tender.
