Dressed rabbit is hard to find these days in some areas. I keep in touch with the local meat market so I know when they get some. Rabbit is a treat for me and I love this recipe.

Ingredients
  • 2 - 3 pound rabbits, cut into serving pieces
  • 1 cup flour
  • 2 tablespoon butter
  • 1 cup chicken broth
  • 2 tablespoon chopped pancetta (Italian bacon)
  • 1 tablespoon olive oil
  • 2 teaspoon minced garlic
  • 1 small onion, sliced
  • 1 cup mushrooms, quartered
  • 1/2 cup red wine
  • 1 teaspoon fresh tarragon
  • 1 tablespoon tomato paste
  • salt and pepper to taste.

Directions
  1. Season the rabbit with salt and pepper to taste and dust with flour. Heat the butter in a heavy skillet and sear the pieces.
  2. Put them in a roasting pan.
  3. In the same skillet, heat the olive oil and saute the onion, garlic, mushrooms and pancetta.
  4. Add the rest of the ingredients and stir.
  5. Pour the sauce over the rabbit, cover and braise for 45 minutes or until the meat is tender.
