Thyme Sorbet Recipe

Ingredients
  • 18 oz water
  • 5 oz sugar
  • 4 sprigs fresh thyme in flower

Directions
  1. Boil the water and sugar until a thick syrup is formed. (abt 15 minutes)
  2. Remove from heat.
  3. Add thyme.
  4. Let thyme steep for about two minutes and then remove from syrup and strain the syrup through a very fine seive.
  5. Pour syrup into a shallow container and place in the freezer until partly frozen.
  6. Remove from the freezer, mix in the frozen edges to the middle, and refreeze. Continue this until it is the proper texture.
