How to make it

  • Boil the water and sugar until a thick syrup is formed. (abt 15 minutes)
  • Remove from heat.
  • Add thyme.
  • Let thyme steep for about two minutes and then remove from syrup and strain the syrup through a very fine seive.
  • Pour syrup into a shallow container and place in the freezer until partly frozen.
  • Remove from the freezer, mix in the frozen edges to the middle, and refreeze. Continue this until it is the proper texture.
