Truffle Risotto

- 2 medium-sized truffles shopping list
- 1 oz butter shopping list
- 1/2 onion, finely chopped shopping list
- 1 rasher of bacon cut into strips shopping list
- 1 lb arborio rice shopping list
- 2 1/2 c chicken stock shopping list
- salt & pepper shopping list
How to make it
- Preheat the oven to 400.
- Cut the truffles into very thin slices.
- Heat the butter in a large pan and add the onion.
- After the onion starts to cook, add the bacon and rice and cook for a minute.
- Add the truffles and the stock and season with salt and pepper.
- Transfer to an ovenproof dish.
- Cook, covered, for 20 minutes.
- Serve immediately.
