A chicken salad log. Great for crackers.

Ingredients
  • 1 8oz pkg softened cream cheese
  • 1/4 cup may or miracle whip
  • 2 Tbsp lemon juice
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 4 drops of hot pepper sauce (tabasco)
  • 2 cups finely cut up cooke chicken (can use can)
  • 2 hard boiled eggs chopped
  • 1/4 cup green onions (scallions)
  • Optional- Garnish-green peppers, chopped olives,& Pimentos

Directions
  1. Mix together cheese, mayo, lemmon juice, salt, pepper and hot sauce
  2. Stir in chicken, eggs and green onions
  3. Shape into log
  4. Wrap in plastic wrap refrigerate till firm (approx 4 hrs)
  5. Garnish with Green pappers Chop pitted ripe olives
  6. Pimentos
