  • Guacamole
  • 1 avocado
  • 2 Tbs. salsa sauce
  • juice of lemon
  • 1 Tbs. cider vinager
  • 1 tomato, optional
  • pinch of dill or basil
  • 1/4 cooking onion
  • 1 tsp. poppy seeds
  • a small garlic clove
  • tiny slice of fresh ginger
  • Blend in food processor or blender.
  • Refrigerate

  • 8 slices bacon cooked crispy
  • --------------------------------------------
  • 1 cup crumbled gorgonzola
  • -------------------------------------------
  • Hamburgers
  • ----------------
  • 1/2 c. very finely grated sweet red onion
  • 1 1/2 pounds ground chuck beef (better if you chop at home and meat has a little marbling)
  • 1/2 lb ground pork
  • 1/2 ln ground veal
  • 3 pressed garlic cloves
  • kosher salt
  • white pepper
  • 1 chopped hot pepper ( optional)
  • olive oil

Directions
  1. Heat pan
  2. 2 turns of oil in hot pan
  3. quickly add onion, garlic and ho pepper if using
  4. 3 minutes no longer
  5. remove with slotted spoon
  6. place in a large bowl
  7. add all other hamberger ingredient
  8. mix well ( with hands)

  10. fry bacon while molding burgers removing from pan when done
  11. reserve a little grease for frying burgers
  12. ----------------------------
  13. now you are going to make 12 rather flat meat patties
  14. why?
  15. because you are going to put in a filling of gorgonzola cheese
  16. a dollop or two in the middle and close em up by pinching the edges.

  18. fry 3 minutes on one side and three on second side
  19. removing from heat for last minute
  20. place on paper towels
  21. ---------------------------------------
  22. heat buns under broiler
  23. place guacamole on one side of a bun and place hamburger on
  24. top , bacon, then more guacamole on top and other side of bun. A crusty bakery or hand made bun is best. Hope you enjoy!
  25. Of course , weather willing, you can grill.
