Toasted Coconut Rice Crispies Recipe
A great subtle variation of a classic fun treat. Light and flavorful!

Ingredients
  • 1 box (12 oz) of Kellogg's Rice Krispies or any other brand of plain puffed rice
  • 4.5 cups (12 oz) of marshmallows
  • 1 tbs of unsalted butter
  • 3 tbs of coconut oil
  • 3/4 cup of toasted unsweetened coconut shavings

Directions
  1. In a heavy bottom pot melt 1tbs of butter and coconut oil
  2. Add marshmallows and melt them over low heat. Mix constantly
  3. Mix in coconut shavings
  4. Place the puffed rice into a deep bowl
  5. Pour the marshmallows over and mix well
  6. Lay out the mixture onto a buttered tray or baking sheet
  7. Smear a little bit of butter on your hands and gently press the mixture into the tray
  8. Let cool and cut into bars. cubes etc
