How to make it

  • Combine all marinade ingredients in a bowl
  • Place hens in a large dish, cover with marinade and allow to marinate for 2 hours or overnight
  • Remove hens from the dish and strain the marinade in a small saucepan
  • Simmer until reduced to a glaze, skimming foam as necessary
  • Place hens in a medium size 9x13 roasting pan
  • Place in 400F oven and roast approximately 30 minutes
  • Brush hens with reserved glaze and continue roasting for approximately 15 minutes more, until glaze is well set and hen juices flow clear when a pairing knife is insterted between the thigh and leg
  • Let hens rest 5 minutes after removing them from the oven and serve on top of a Julienne of root vegetables
