a really nice tuna pasta very cheap and very fast

Ingredients
  • 400g dried penne pasta
  • 425g can tuna in oil
  • 1 cup drained green valley greek pitted olives
  • 2 teaspoons of lemon juice
  • 2 teaspoons of finely grated lemon rind
  • 80g baby rocket leaves
  • shaved parmesan cheese,to serve

Directions
  1. cook pasta following instructions on packet.Drain
  2. reduce heat add tuna.Add pasta,olives,lemon rind,Add lemon jucie and rocket.
  3. Season with salt and pepper.Toss combine.
  4. Serve with grated parmesan on top.
  5. (tip) for extra colour i chargill red capsicum or semi-sun dried tomarto's
