How to make it

  • Take a knife and cut deeply into the brisket a few times along its entire length.
  • Take the garlic cloves and push them as far as possible into the cuts on the brisket.
  • Sprinkle the Greek seasoning freely onto brisket. Amount will vary depending on desired taste.
  • Using a outdoor charcoal barbecue or grill, heat charcoals till gray (hot) and place mesquite wood over them.
  • Place the brisket so the fat side is facing down onto grill/barbecue.
  • Do not turn brisket and simply allow it to smoke for 2 hours on grill/barbecue.
  • Take the meat off of the grill/barbecue.
  • Using heavy aluminum foil, tightly wrap the meat 2 times in it.
  • Place brisket on cookie sheet and allow to cook in the oven at 250 degrees F for 2 hours.
  • Take out of oven and leave foil on for 30 minutes to 1 hour to allow the meat to absorb extra juices.
  • Remove foil, cut, serve, and enjoy!
