Mock Chocolate Truffles Recipe
I created these with the extra frosting I made when making the holiday jelly roll - oh so easy and oh so decadent....another reason to make 1/2 more recipe of my chocolate almond butter cream frosting.

Ingredients
  • 1/2 recipe of my Chocolate-Almond Butter Cream Frosting - well chilled at least 2 hours.
  • To make it easier if you don't have that frosting recipe handy here's the link to copy and paste:

  • 1/2 cup powdered sugar - sifted
  • 3 tablespoons cocoa powder (optional)
  • 3 tablespoons sweetened coconut (optional)
  • One can of very cold soda (not to open but to help keep your hands cold)
  • Equipment needed: a couple of small bowls for rolling the different coverings of the mock truffles in, small scoop, sieve, and a plate to serve your decadent mock truffles on.

Directions
  1. Make frosting if you haven't already andplace in fridge to chill.
  2. Sift powdered sugar and set aside on one bowl.
  3. Wish to have some of the 'mock truffles covered in cocoa powder? Then mix half of the powdered sugar and sift with the cocoa and set aside this mixture into yet another bowl.
  4. Place optional covering such as sweetened coconut in other bowl.
  5. Take out that can of soda, hold hands around can for a moment to get them cooled. Drink can of soda if you wish at end of making 'mock truffles' or simply place back into fridge.
  6. With small scoop or spoon, scoop out some of the chilled frosting to create a one inch ball in your hands.
  7. As if you are making mini meatballs, work quickly to avoid melting frosting,
  8. Then quickly roll 'truffle' in your choice of covering, powdered sugar, the coconut or the cocoa-powdered sugar combo. Once completely covered, gently pick them up and place on serving platter.
  9. Continue with the rest of the frosting or what we now call "Mock truffles". I dip them into several of the choices mentioned above creating a pretty looking dish.
  10. Place truffles in fridge to keep until ready to serve.
  11. Yummy!
