How to make it

  • Stir all dry ingredients together except sugar. Set aside.
  • Peel and grate carrots and place in large mixing bowl. Add pineapple.
  • Beat eggs slightly in small bowl. Add sugar to eggs, then add sugar/egg mixture to carrots and pineapple in large mixing bowl.
  • Mix in vegetable oil
  • Add reserved pineapple juice.
  • Add dry ingredients a little at a time and mix after each addition.
  • Stir in coconut and walnuts.
  • Grease and flour either a tube pan or 2-9" round pans. Pour batter in pan(s).
  • Bake at 350 degrees for 35-45 minutes for tube pan, or 30-35 minutes for round pans or until firm to touch. Cool in pan. Turn out on to cooling rack.
  • Ice cake and decorate with walnut halves if desired.
