Ingredients
  • 2 1/4 cups flour
  • 1 tsp baking soda
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. Allspice
  • 1/2 tsp. nutmeg
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup coarse chopped walnuts
  • 2 cups grated carrots
  • 4 eggs
  • 1 1/4 cups vegetable oil
  • 2 1/4 cups sugar
  • 1/2 cup coconut
  • 1-8oz. can crushed pineapple (reserve juice)
  • Icing:
  • 1-8oz package cream cheese, softened
  • 1/4 cup softened butter (do not use margarine)
  • 1/2 tsp vanilla
  • 2 cups Confectioner's sugar
  • (if using two 9 in. round pans, you might want to make double the icing to completely ice entire cake)

Directions
  1. Stir all dry ingredients together except sugar. Set aside.
  2. Peel and grate carrots and place in large mixing bowl. Add pineapple.
  3. Beat eggs slightly in small bowl. Add sugar to eggs, then add sugar/egg mixture to carrots and pineapple in large mixing bowl.
  4. Mix in vegetable oil
  5. Add reserved pineapple juice.
  6. Add dry ingredients a little at a time and mix after each addition.
  7. Stir in coconut and walnuts.
  8. Grease and flour either a tube pan or 2-9" round pans. Pour batter in pan(s).
  9. Bake at 350 degrees for 35-45 minutes for tube pan, or 30-35 minutes for round pans or until firm to touch. Cool in pan. Turn out on to cooling rack.
  10. Ice cake and decorate with walnut halves if desired.
