Carrot Cake W Cream Cheese Icing

- 2 1/4 cups flour shopping list
- 1 tsp baking soda shopping list
- 1 1/2 tsp. cinnamon shopping list
- 1/2 tsp. allspice shopping list
- 1/2 tsp. nutmeg shopping list
- 2 tsp. baking powder shopping list
- 1/2 tsp. salt shopping list
- 1 cup coarse chopped walnuts shopping list
- 2 cups grated carrots shopping list
- 4 eggs shopping list
- 1 1/4 cups vegetable oil shopping list
- 2 1/4 cups sugar shopping list
- 1/2 cup coconut shopping list
- 1-8oz. can crushed pineapple (reserve juice) shopping list
- Icing: shopping list
- 1-8oz package cream cheese, softened shopping list
- 1/4 cup softened butter (do not use margarine) shopping list
- 1/2 tsp vanilla shopping list
- 2 cups Confectioner's sugar shopping list
- (if using two 9 in. round pans, you might want to make double the icing to completely ice entire cake) shopping list
How to make it
- Stir all dry ingredients together except sugar. Set aside.
- Peel and grate carrots and place in large mixing bowl. Add pineapple.
- Beat eggs slightly in small bowl. Add sugar to eggs, then add sugar/egg mixture to carrots and pineapple in large mixing bowl.
- Mix in vegetable oil
- Add reserved pineapple juice.
- Add dry ingredients a little at a time and mix after each addition.
- Stir in coconut and walnuts.
- Grease and flour either a tube pan or 2-9" round pans. Pour batter in pan(s).
- Bake at 350 degrees for 35-45 minutes for tube pan, or 30-35 minutes for round pans or until firm to touch. Cool in pan. Turn out on to cooling rack.
- Ice cake and decorate with walnut halves if desired.
