Pizza Soup Recipe

Ingredients

1 1/4 C. sliced fresh mushrooms

1/2 C. finely chopped onion

1 tsp. vegetable oil

2 C. water

16 oz Marinara sauce

1 C. chopped fresh tomatoes

2 cloves garlic, crushed

1 C. cooked Italian sausage

1/4 tsp. Italian seasoning

1/4 C. grated Parmesan cheese

Shredded mozzarella cheese to garnish

Garlic croutons

Directions

In large pan, saute mushrooms and onion in oil for 2-3 minutes, until tender. Add water, pizza sauce, garlic, tomatoes, sausage and Italian seasoning. Bring to a boil over medium heat. Reduce heat; cover and simmer for 20 minutes, stirring occasionally. Before serving, stir in parmesan. Garnish with mozzarella and croutons. Yield: 4 servings

You can add whatever you prefer such as green peppers, olives, pepperoni and such.

This sounds really good. I used to make a pizza soup using similar ingredients except, I used a can of tomato soup with basil. It was very good! Thanks for the post!
