Ingredients
  • 1 1/4 C. sliced fresh mushrooms
  • 1/2 C. finely chopped onion
  • 1 tsp. vegetable oil
  • 2 C. water
  • 16 oz Marinara sauce
  • 1 C. chopped fresh tomatoes
  • 2 cloves garlic, crushed
  • 1 C. cooked Italian sausage
  • 1/4 tsp. Italian seasoning
  • 1/4 C. grated Parmesan cheese
  • Shredded mozzarella cheese to garnish
  • Garlic croutons

Directions
  1. In large pan, saute mushrooms and onion in oil for 2-3 minutes, until tender. Add water, pizza sauce, garlic, tomatoes, sausage and Italian seasoning. Bring to a boil over medium heat. Reduce heat; cover and simmer for 20 minutes, stirring occasionally. Before serving, stir in parmesan. Garnish with mozzarella and croutons. Yield: 4 servings
  2. You can add whatever you prefer such as green peppers, olives, pepperoni and such.

This sounds really good. I used to make a pizza soup using similar ingredients except, I used a can of tomato soup with basil. It was very good! Thanks for the post!
