Ingredients
  • whole grain bread
  • low fat refried beans
  • lowfat mayo
  • salsa
  • 2-3 boneless skinless chicken breasts
  • lettuce
  • ripe tomato, sliced
  • ripe avocado, sliced/cubed/mashed
  • lowfat sharp cheddar or pepperjack cheese, sliced

Directions
  1. Cook chicken breasts in 375ยบ oven for 20 minutes. Slice when done.
  2. Switch the oven to "Broil". If necessary move top rack to 3" below broiler.
  3. Toast the bread for the sandwich bottoms. Leave the tops untoasted for now.
  4. Place the toast on a cookie sheet
  5. Spread toast with refried beans
  6. Put a tomato slice and some lettuce on the beans
  7. Top with chicken slices
  8. Cover with sliced cheese
  9. Put the cookie sheet under the broiler for 5 minutes or so, until cheese is melted.
  10. While cheese is melting, toast the bread for the sandwich tops
  11. Spread top slices with salsa, or salsa & mayo, depending on how spicy you want it
  12. When cheese is melted, remove cookie sheet from the oven and top melted cheese with avocado
  13. Top with salsa'd toast
  14. Slice in half or quarters & run them through with a toothpick, in a vain attempt to keep it from squishing apart when you bite into it.
