These are a delicious and healthy alternative to fries.

Ingredients
  • 2 large Sweet Potatoes or Yams
  • 2 tbsp olive oil
  • 1 tsp Rosemary (or thyme / basil / oregano / mix it up - you pick your favourite)
  • 1/2 tsp salt
  • 1/2 tsp ground pepper

Directions
  1. Cut up Sweet Potatoes into 1/2 inch pieces (more or less)
  2. Coat in olive oil and spice(s), salt and pepper
  3. Spread fries in shallow baking dish
  4. Bake in 400F oven for 35-45 minutes, until tender
