Easy Chicken and Rice

- 1 lb. or 4 boneless skinless chicken breast halves shopping list
- 1 can (10 3/4 oz.) cream of chicken soup shopping list
- 1 1/2 cups water shopping list
- 2 cups instant white rice, uncooked shopping list
- 2 cups broccoli flowerets, fresh or fozen, thawed shopping list
- 1 cup shredded cheddar cheese shopping list
How to make it
- Heat small amount of oil in large skillet on medium-high heat
- Add chicken
- Cook 5 minutes on each side or until cooked through
- Remove from skillet
- Add soup and water (sauce mixture)
- Bring to a boil
- Stir in rice and broccoli (vegetables)
- Top with chicken and cheese (Add ons)
- Cover
- Cook on low heat for 5 minutes

- Asian -
- (Sauce Mixture) 1 can (14 1/2 oz.) chicken broth, 1/2 cup water, 3-4 tbsp. soy sauce and 3/4 tsp. garlic powder
- (vegetables) 2 cups stir fry vegetables, fresh or frozen
- (add ons) a sprinkle of peanuts
- Mexican -
- (Sauce Mixture) 1 cup salsa, 1 1/3 cups water
- (vegetables) 1 cup corn or 1 can black beans, drained
- (add ons) 1 cup shredded cheese
- Italian Parmesan -
- (Sauce Mixture) 1 cup spaghetti sauce, 1 cup water
- (vegetables) 1/2 cup sliced mushrooms
- (add ons) 1 cup shredded mozzarella cheese and a sprinkle of grated parmesan cheese
