Not many know that Italians eat pasta in this manner. I do sprinkle pecorino romano on, but very little.

Ingredients
  • 6 tablespoons extra virgin olive oil
  • 1 and 1/2 cups coarse fresh bread crumbs
  • 1 tablespoon sugar
  • 1 pound spaghetti
  • 1 and 1/2 teaspoons fine sea salt

Directions
  1. Directions:
  2. Heat 2 tablespoons of olive oil in a large saute pan.
  3. Add the bread crumbs and stir with a wooden spoon to coat them with the olive oil.
  4. Cook the crumbs over medium heat, stirring occasionally, until they are golden brown in color.
  5. Remove the crumbs to a bowl, stir in the sugar, and set aside.
  6. Cook the spaghetti according to the instructions. Drain the pasta, reserving 2 tablespoons of cooking water.
  7. Return the pasta to the cooking pot, stir in the water, the remaining 1/4 cup olive oil, and the salt.
  8. Transfer the pasta to a platter.
  9. Sprinkle half of the bread crumbs over the top and, with two spoons, toss the pasta to evenly coat the strands with the crumbs.
  10. Sprinkle the remaining crumbs over the top and serve immediately.
