How to make it

  • Directions:
  • Heat 2 tablespoons of olive oil in a large saute pan.
  • Add the bread crumbs and stir with a wooden spoon to coat them with the olive oil.
  • Cook the crumbs over medium heat, stirring occasionally, until they are golden brown in color.
  • Remove the crumbs to a bowl, stir in the sugar, and set aside.
  • Cook the spaghetti according to the instructions. Drain the pasta, reserving 2 tablespoons of cooking water.
  • Return the pasta to the cooking pot, stir in the water, the remaining 1/4 cup olive oil, and the salt.
  • Transfer the pasta to a platter.
  • Sprinkle half of the bread crumbs over the top and, with two spoons, toss the pasta to evenly coat the strands with the crumbs.
  • Sprinkle the remaining crumbs over the top and serve immediately.

    ....an authentic, easy, peasant-style Tuscan recipe (they would never throw out day-old bread) and it IS very good! TY, JM :)
