Mini Salad Bowls Recipe
This is a great appetizer. Its good for you and delicious too.

Ingredients
  • 1/2 Head of lettece finely chopped
  • 1 sweet onion finely chopped
  • 1 lbs Shrimp thawed
  • 1 Cup Mozzarella Cheese shredded
  • 1/2 Cup Parmesian Cheese Grated
  • 4 Large Tortillas
  • Salt and Pepper
  • Creamy Italian dressing or Ceasar dressing

Directions
  1. Mix Mozzarella and Parmesian in small bowl and set aside
  2. Cut each tortilla into 4 even sections (like a pie)
  3. Place in microwave for a few seconds to soften.
  4. Gently Press each section of tortilla into a regular sized muffin pan
  5. Place into a 325 degree oven for approx 5 to 10 minutes or until edges are golden brown. Times may very by oven.
  6. Remove from oven, leave in muffin pan and set aside to cool
  7. Place Lettece, onion, and shrimp in a bowl. Toss with 2 to 3 Tlbs of Dressing
  8. When tortillas are cooled place 1 tsp of cheese mixture in each one. Then fill with Shrimp salad. Sprinke with salt and pepper.
  9. Chill and serve

OH MY GOSH! THESE ARE AMAZING!!! This is a type of food I wouldn't consider to be one of my favorites...and GEES WAS I WRONG!!! THESE WERE THE BEST NEW RECIPE I HAVE TRIED IN A LONG TIME!! I still have not made them myself but C did a wonderful job on them. I really need to make them sometime soon. Love ya girl, Nelly
