Smoked Salmon Scramble

- 4 eggs shopping list
- 1/4 cup milk shopping list
- butter shopping list
- 1/2 cup smoked salmon trimmings (sold at any self-respecting grocery store) shopping list
- 3-4 thin scallions chopped shopping list
- 1/4 pack of plain cream cheese, chunked shopping list
- salt, pepper to taste shopping list
- capers (optional) shopping list
How to make it
- Whisk eggs and milk, add a pinch of salt and pepper and set aside
- -
- Melt butter in a skillet and drop in salmon chunks
- Cook until they loose their bright color, for about 2-3 minutes
- Drop in scallions and cook another minute
- Pour eggs over the salmon and onions, lower the heat and add the cream cheese.
- Scramble gently until all egg is cooked but not too firm. Don't mash too much, you want cream cheese to remain in chunks as much as possible
- Add capers now, if you like

- Serve hot, with tomato slices and pickle on the side
