Healthy Curry Sauce Recipe
A fab base curry sauce recipe to use with meats or veggies for a curry.

Ingredients
  • 1 Onion
  • 2 cloves Garlic
  • 1 tsp finely grated ginger
  • 1tbsp hot or med curry powder
  • 400g tin chopped tomatoes
  • 2 tbspn sweetner
  • 57g/ 2oz natural yoghurt or Quark/fromage frais
  • 1tbspn chopped mint
  • 1 tbspn chopped coriander

Directions
  1. Chop onions and crush garlic.
  2. Spray frying pan with fry light or a little oil and place on heat - add onion, garlic, and ginger and fry for 1-2 mins before adding curry powder.
  3. Stir and cook for another couple of mins then add tomatoes, sweetner and stock.
  4. Bring to boil and reduce heat to simmer gently for 12-15 mins.
  5. Then blitz sauce in food processor or with hand blender, and return to heat.
  6. Heat gently then add quark/yoghurt/fromage frais and herbs.
  7. Add meat or fish or veggies of your choice.

Great recipe but how much stock do you need and when do you add the mint and corriander? i just threw it in with the ginger and it turned out good


Duh - sorry I forgot to edit out the stock part of the recipe as I never use it... but if you want you can thin it down with 250ml.
I always add the herbs at the end.


I think "fromage frais" is cream cheese in English not jogurt--in German it would be Frischkaese or Quark.
