Poor Girl Shepards Pie Recipe
It was really blustery cold yesterday and I wanted some rib-sticking comfort food. I used what I had in the fridge and pantry and came up with my version of Shepards Pie. Enjoy!

Ingredients
  • 2 TBLSP olive oil
  • 1 shallot, finely chopped
  • 1 garlic clove, finely chopped
  • 2 lbs ground sirloin
  • 2 TBLSP Worchestershire Sauce
  • Salt and Pepper
  • Frozen Mixed Veggies
  • Taco flavored shredded cheddar cheese
  • 2 containers Country Crock Garlic Mashed Potatoes
  • Parmasan cheese

Directions
  1. I used a large cast iron everyday skillet so that I didn't have to transfer any ingredients. I just kept layering then baked the pie in this same pan.
  2. Add olive oil to heated skillet.
  3. Add shallot and garlic and cook until carmelized.
  4. Add ground sirloin and cook until browned. Drain most of the liquid.
  5. Cover with a generous layer of frozen veggies, your choice.
  6. Cover with a generous layer of the shredded cheddar cheese.
  7. Top with containers of garlic mashed potatoes.
  8. Top that with a sprinkling of Parmasan cheese, salt and pepper.
  9. Bake at 350 for approx. 60 mins.
  10. Enjoy!
