Tomato Bean Soup - Vegan Recipe Sheba / All my dishes

This is my vegetarian sister-in-laws version of fast food. I sometimes play around with the seasonings and add cumin or sumac for extra depth.

Ingredients
  • 1 - 19 oz can stewed tomatoes, chopped
  • 1 - 14 oz can Deep Browned Beans in Tomato Sauce
  • 1 cup water
  • 2 green onions, sliced
  • 1/2 tsp dried basil (fresh if you have it)
  • 1 tbsp finely chopped parsley

Directions
  1. Combine all ingredients (except fresh herbs, which I add last) . Bring to a boil. Simmer, uncovered, for 10 minutes, stirring occasionally.
  2. You could add some cheese prior to serving, but we like it just as is.
