Tomato and Vodka Soup

- 1 tbsp butter or olive oil shopping list
- 3 cloves garlic shopping list
- 1 medium / large onion, peeled and chopped finely shopping list
- ½ small carrot sliced shopping list
- ½ branch celery sliced (optional) shopping list
- 12 / 15 large, ripe tomatoes, cored and chopped and preferably peeled (If sieving, then peeling them is wise !!! otherwise don't worry too much !) shopping list
- ½ tbsp paprika powder shopping list
- 500ml chicken or vegetable stock shopping list
- 4 tsp sour cream (optional) shopping list
- salt and pepper to taste shopping list
- 6 oz vodka shopping list
- Fresh Chopped basil (to taste) shopping list
How to make it
- In a large pot or Wok heat up the butter / oil and add the onions and garlic.
- Cook until the onion turns transparent
- Add the sliced carrots and celery, cook for 5 minutes on a medium heat
- Add the tomatoes and paprika, cook until reduced and the tomatoes are mushy.
- Pour into a liquidiser or food processor and process until the soup is smooth in texture. (Or sieve the soup to remove the solids if you don't have a food processor / liquidiser)
- Pour back into the pan / wok
- On a lower heat, cover and simmer for 15 minutes.
- Add Chicken / Vegetable stock and Basil
- Cover and simmer for 45 minutes.
- When ready to serve add the vodka and serve immediately.
- If freezing the soup, do NOT add the vodka !
- Decorate with 1 teaspoon of sour cream (Optional)
