How to make it

  • In a large pot or Wok heat up the butter / oil and add the onions and garlic.
  • Cook until the onion turns transparent
  • Add the sliced carrots and celery, cook for 5 minutes on a medium heat
  • Add the tomatoes and paprika, cook until reduced and the tomatoes are mushy.
  • Pour into a liquidiser or food processor and process until the soup is smooth in texture. (Or sieve the soup to remove the solids if you don't have a food processor / liquidiser)
  • Pour back into the pan / wok
  • On a lower heat, cover and simmer for 15 minutes.
  • Add Chicken / Vegetable stock and Basil
  • Cover and simmer for 45 minutes.
  • When ready to serve add the vodka and serve immediately.
  • If freezing the soup, do NOT add the vodka !
  • Decorate with 1 teaspoon of sour cream (Optional)
  • ENJOY !
