How to make it

  • Soften gelatin in water and set aside.
  • In a saucepan mix milk, 1/2 cup sugar, flour and salt and cook over low heat stirring constantly.
  • Boil for one minute.
  • Stir in softened gelatin until throughly dissolved and set aside to cool.
  • When partially set, beat it with mixer on low until smooth.
  • Blend in vanilla and almond extract.
  • Fold coconut into pudding mixture.
  • Beat egg whites, 1/2 cup sugar and cream of tartar until thick to make a meringue.
  • Fold the whipped whipping cream into the meringue.
  • Combine the pudding and meringue and gently put into baked pie shells.
  • Serve with red cherries
