Ingredients
  • 1 cup sugar
  • 3 egg whites
  • 1/4 cup flour
  • 1/4 tsp cream of tartar
  • 1 env. Knox unflavored gelatin
  • 3/4 T clear vanilla
  • 1/2 tsp salt
  • 1/4 tsp almond extract
  • 1 1/2 cup milk
  • 1/2 cup whipped whipping cream
  • 1/4 cup cold water
  • 1 c coconut
  • 2 baked pie shells
  • red cherries

Directions
  1. Soften gelatin in water and set aside.
  2. In a saucepan mix milk, 1/2 cup sugar, flour and salt and cook over low heat stirring constantly.
  3. Boil for one minute.
  4. Stir in softened gelatin until throughly dissolved and set aside to cool.
  5. When partially set, beat it with mixer on low until smooth.
  6. Blend in vanilla and almond extract.
  7. Fold coconut into pudding mixture.
  8. Beat egg whites, 1/2 cup sugar and cream of tartar until thick to make a meringue.
  9. Fold the whipped whipping cream into the meringue.
  10. Combine the pudding and meringue and gently put into baked pie shells.
  11. Serve with red cherries
