  • got this from bon appetit test kitchen:
  • 4 8-ounce yellow delicious apples-peeled
  • 1/2 cup packed brown sugar
  • 1 1/4 tsp. cinnamon
  • 1/3 cup raisins
  • 1 cup heavy whipped cream
  • 4 purchased refrigerated uncooked large flaky biscuits(from a 16.3-ounce tube) at room temp.
  • 1 large egg-beaten to blend

Directions
  1. preheat oven to 400*F.
  2. using a mellon baller,core apples, leaving bottom intact place in a glass pie dish, spacing apart. microwave at 50% power till tender,about 10 minutes
  3. refrigerate for 5 minutes to cool
  4. meanwhile mix sugar and cinnamon in a small bowl
  5. transfer 3 Tbs. cinnamon sugar to a small sauce pan add raisins and 3 Tbs. cream , stir over low heat until sugar is disolved
  6. combine 3 Tbs. of cinnamon suger and remaining cream, in a medium bowl and whisk to peaks,cover and refrigerate
  7. roll out each biscuit on a floured surface to a thin 8" circle, brush lightly with egg
  8. place an apple in the center of each round
  9. fill apples with rasin mixture,over filling slightly,.pull up sides of dough to top of apples(3,6,9 and 12 o'clock positions)
  10. twist dough tops making an apple stem shape
  11. using fingers press seams tightly to seal
  12. place on a baking sheet,brush lightly with egg, sprinkle with remaining cinnamon sugar and bake till golden brown about 18 minutes
  13. serve with cinnamon whipped cream
