Really easy recipe that's quick to put together and the kids will eat. Works well on a buffet table too, since it tastes good even at room temperature.

Ingredients
  • 6 large potatoes (I use russet or yukon golds), peeled or not, whatever you prefer
  • 2 medium onions
  • 1 package hot dogs (I use turkey)
  • 2 cans concentrated cream soup - mushroom, celery, chicken, whatever you have or like
  • 1 can (from soup) milk
  • 2 cups cheese - whatever you have or like
  • pepper to taste

Directions
  1. Preheat oven to 350 degrees.
  2. Slice potatoes, onions and hot dogs in food processor.
  3. Whisk together soup and milk, add pepper to taste
  4. Layer 1/2 of potatoes in 9"x13" casserole dish, then 1/2 of onions, 1/2 of hot dogs, repeat; end with 1 layer of cheese.
  5. Pour soup mixture over the top, spreading evenly.
  6. Bake for about 45 minutes, until top is browned and bubbly and potatoes are cooked through.
