How to make it

  • 1. Making filling and sauce
  • • Cut ½ quantity of strawberries into thin slices (use large ones). Use 250 g for strawberry sauce and leave remaining strawberries (smaller ones) as whole for garnish.
  • • In a medium bowl, beat ricotta cheese, double cream, sugar, and 1 tsp vanilla. Stir in strawberry slices. Cover and refrigerate.
  • • In a blender, mix 250 g strawberries with powdered sugar and lemon juice. Strain through a fine sieve in a bowl.
  • 2. Making crêpe and serving
  • • In a medium bowl, mix flour, milk, eggs and 1/2 tsp vanilla. Whisk well until mixture is smooth with no clumps.
  • • Heat a small non-stick skillet over low heat. Add ½ tsp butter and leave to melt. Add ¼ cup from milk and flour mixture and spread all over skillet. Leave for about 1 minute until bottom is golden.
  • • Flip to cook the other side until golden. Remove and put on a platter. Repeat the process until you finish all quantity of mixture, arranging crêpes over each other on the platter. You will have about 10 crêpes.
  • • Spread each crêpe with 1-2 tbsp of filling. Fold into half or quarter. Spread about 2 tbsp of strawberry sauce on top. Garnish with fresh strawberries. Serve immediately.
  • Tip:You can use a special crêpe pan in making crêpes. Usually the first crêpe is damaged and thrown away; don't worry. Add a little milk or flour to adjust crêpe mixture if needed.
