How to make it

  • Place butterscotch chips and sweetened condensed milk in top of double boiler
  • Cook over low heat until chips melt, stirring frequently
  • Add vanilla and rum, stir until blended and very smooth
  • Remove from heat, cool to lukewarm
  • In medium sized bowl, whip cream until soft peaks form
  • Stir about 1/3 cup of the whipped cream into the cooled butterscotch mixture
  • Mixture will lighten
  • Then fold remaining whipped cream into the mixture
  • Divide this between your choice of 6 serving cups
  • Place in the freezer at least an hour
  • When serving you may add shaved bittersweet chocolate
  • Serve cold
  • This calls for a cup of strong coffee :)

    Love butterscotch flavored desserts. Only problem is I can't get butterscotch morsels here. I will make your dessert once I have them.
