Sweethearts Butterscotch Pots De Cremes Recipe

	butterscotch chips sweetened condensed milk cream rum

Ingredients

3/4 cup butterscotch chips*

2 tablespoons sweetened condensed milk

1/2 teaspoon pure vanilla extract

2 teaspoons dark rum, (optional)

3/4 cup heavy whipping cream

*May sustitute chocolate chips

Directions

Place butterscotch chips and sweetened condensed milk in top of double boiler

Cook over low heat until chips melt, stirring frequently

Add vanilla and rum, stir until blended and very smooth

Remove from heat, cool to lukewarm

In medium sized bowl, whip cream until soft peaks form

Stir about 1/3 cup of the whipped cream into the cooled butterscotch mixture

Mixture will lighten

Then fold remaining whipped cream into the mixture

Divide this between your choice of 6 serving cups

Place in the freezer at least an hour

When serving you may add shaved bittersweet chocolate

Serve cold

This calls for a cup of strong coffee :)
