Sweethearts Butterscotch Pots De Cremes

- 3/4 cup butterscotch chips* shopping list
- 2 tablespoons sweetened condensed milk shopping list
- 1/2 teaspoon pure vanilla extract shopping list
- 2 teaspoons dark rum, (optional) shopping list
- 3/4 cup heavy whipping cream shopping list
- *May sustitute chocolate chips shopping list
How to make it
- Place butterscotch chips and sweetened condensed milk in top of double boiler
- Cook over low heat until chips melt, stirring frequently
- Add vanilla and rum, stir until blended and very smooth
- Remove from heat, cool to lukewarm
- In medium sized bowl, whip cream until soft peaks form
- Stir about 1/3 cup of the whipped cream into the cooled butterscotch mixture
- Mixture will lighten
- Then fold remaining whipped cream into the mixture
- Divide this between your choice of 6 serving cups
- Place in the freezer at least an hour
- When serving you may add shaved bittersweet chocolate
- Serve cold
- This calls for a cup of strong coffee :)
