- 1 tspn ghee (soft clarified butter) shopping list
- 1 tspn vegetable oil shopping list
- 2 bay leaves shopping list
- 1 tspn cumin seeds shopping list
- 2 cloves garlic, finely chopped shopping list
- 2 onions, diced shopping list
- 1 tspn crushed ginger shopping list
- 2 small carrots, diced shopping list
- 2 medium potatoes, diced shopping list
- 1 tspn ground turmeric shopping list
- 1/2 cup green peas shopping list
- 3 tomatoes, diced shopping list
- 1 tspn ground coriander shopping list
- 1 tspn salt shopping list
- 1/2 cauliflower, separated into florets shopping list
- 1 bunch fresh coriander (cilantro), chopped shopping list
How to make it
- Heat ghee and oil together in a pan
- Add bay leaves and cumin seeds and cook until golden brown
- Add garlic, ginger and onion and cook until the onions are soft
- Add turmeric, cauliflower, peas, tomatoes, coriander and salt and mix well
- If needed add half a cup of water and cook for 3 to 4 minutes
- Garnish with more chopped coriander (cilantro)
- Serve with steamed rice, roti, pappadums, cucumber raita
