A fancy party apple salad. Delicious.

Ingredients
  • 3 cups red apples, diced
  • 2 cups celery, diced
  • 1 large can crushed pineapple, drained (reserve juice for dressing)
  • 1 cup chopped pecans, medium chop
  • 1 cup whipping cream, whipped
  • DRESSING:
  • Juice from pineapple
  • 1 egg, beaten
  • 3 tablespoons flour
  • 3 tablespoons sugar
  • 2 tablespoons lemon juice

Directions
  1. Whisk all dressing ingredients in a pan, stirring constantly, cook over medium heat until thickened
  2. Remove from heat and pour into dish to COOL
  3. When cooled, pour over apples, celery, pineapple, pecans
  4. Mix well by folding in gently
  5. Fold in whipped cream
  6. Refrigerate until time to serve
