A good meal in one for the family. Fairly low in fat as well - nice served with jacket potatoes.

Ingredients
  • 4 or 6 rashers of bacon, depending on the size of your dish.
  • 500g lean mince - your choice of meat type
  • 114g wholemeal bread, whizzed in a processor to make breadcrumbs
  • 84g half fat cheddar cheese, grated
  • 1 onion, chopped
  • 2 tbsp Helmans Extra Light mayonnaise
  • 2 tbsp Sweet Pickle
  • 2 tsp dry mustard
  • 1 egg
  • 6 tbsp Tomato Ketchup

Directions
  1. Preheat the oven to 180c/350f/gas mark 4
  2. Cook the bacon under a grill for about 3 minutes then set aside.
  3. In a large mixing bowl, use your hands gently but thoroughly mix together the mince, breadcrumbs, half the grated cheese, chopped onion, mayonnaise, pickle, mustard and egg.
  4. Pat the mixture into a shallow baking pan.
  5. Spread the top of the pie with the ketchup, then lay the cooked bacon strips over the top.
  6. Bake until the pie is firm and the bacon is crisp (about 45 - 50 mins).
  7. Sprinkle the top of the pie with the remaining cheese to melt during the last 5 mins of baking.
  8. Let the pie stand in the baking dish for 10 mins, then cut into portions
