Chiles N Cheese Chicken Enchiladas

- 3/4 cup finely chopped onion shopping list
- 5 garlic cloves, minced shopping list
- 2 Tablespoons butter shopping list
- 4 Tablespoons flour shopping list
- 2 cups chicken broth shopping list
- 2 (4-ounce) cans chopped green chiles shopping list
- ½ teaspoon ground coriander shopping list
- ¼ teaspoon black pepper shopping list
- 2 cups (8 ounces) shredded Monterey shopping list
- Jack cheese, divided shopping list
- 1 cup sour cream shopping list
- 4 cups chopped cooked chicken shopping list
- 8 flour tortillas (8 inches-in-diameter) shopping list
- sliced ripe olives, chopped tomatoes and shopping list
- green onions, optional. shopping list
How to make it
- In a medium saucepan, sauté onion and garlic in butter until tender.
- Combine flour and broth until smooth and gradually add to pan.
- Stir in chilies, coriander and peppers.
- Bring to a boil; cook and stir until thickened (approx. 4 minutes). Remove from heat; stir in 1 cup cheese and sour cream until
- cheese is melted.
- Combine chicken and 1 ½ cups of sauce.
- Place about 1/2 cup chicken mixture down the center of each tortilla.
- Roll up and place seam side down in a greased 9x13-inch baking dish.
- Pour remaining sauce over enchiladas.
- Bake, uncovered, at 350 degrees F. for 20 to 30 minutes.
- Sprinkle with remaining cheese.
- Bake 5-10 minutes longer or until cheese is melted.
- Garnish with olives, tomatoes and green onions, if desired.
