Chiles N Cheese Chicken Enchiladas Recipe
This is really a tasty, rich dish and what I like most about it, is that it doesn’t have that same old tiresome tomato base! I sprinkle freshly diced tomatoes on top along with sliced green onions....makes a nice presentation!

Ingredients
  • 3/4 cup finely chopped onion
  • 5 garlic cloves, minced
  • 2 Tablespoons butter
  • 4 Tablespoons flour
  • 2 cups chicken broth
  • 2 (4-ounce) cans chopped green chiles
  • ½ teaspoon ground coriander
  • ¼ teaspoon black pepper
  • 2 cups (8 ounces) shredded Monterey
  • Jack cheese, divided
  • 1 cup sour cream
  • 4 cups chopped cooked chicken
  • 8 flour tortillas (8 inches-in-diameter)
  • Sliced ripe olives, chopped tomatoes and
  • Green onions, optional.

Directions
  1. In a medium saucepan, sauté onion and garlic in butter until tender.
  2. Combine flour and broth until smooth and gradually add to pan.
  3. Stir in chilies, coriander and peppers.
  4. Bring to a boil; cook and stir until thickened (approx. 4 minutes). Remove from heat; stir in 1 cup cheese and sour cream until
  5. cheese is melted.
  6. Combine chicken and 1 ½ cups of sauce.
  7. Place about 1/2 cup chicken mixture down the center of each tortilla.
  8. Roll up and place seam side down in a greased 9x13-inch baking dish.
  9. Pour remaining sauce over enchiladas.
  10. Bake, uncovered, at 350 degrees F. for 20 to 30 minutes.
  11. Sprinkle with remaining cheese.
  12. Bake 5-10 minutes longer or until cheese is melted.
  13. Garnish with olives, tomatoes and green onions, if desired.

I love enchiladas. I cook my chicken in the oven on low for 1 1/2 hours with a chicken base(paste) smoothed all over it. I learned that from a gal on here..the chicken comes out moist and so flavorful!

I will have to look at the bottle when I get home..Im at a different location right now!! I can tell you it comes in a small jar(I know Knorrs is one brand) Mine is another brand, can't think of it;). I will fwd u the recipe I got this from..its so good!! Michelle
