Sweet Potato Butter Recipe
One of the best butters I have tried. I like this better than apple butter. Really good between 2 pieces of bread.

Ingredients
  • 4 cups peeled sweet potatoes, cut into slices about 1/8 to 1/4 inch thick
  • 2 cups peeled, cored, and chopped apples
  • 3/4 cup granulated sugar
  • 3/4 cup firmly packed light brown sugar
  • 1 tsp. cinnamon or to taste
  • 1/4 tsp. nutmeg, optional
  • 1/2 cup water

Directions
  1. Combine all ingredients in slow cooker and stir. Cook on high until sweet potatoes are fully cooked.
  2. Mash or beat with an electric mixer until well blended.
  3. This mixture will be a little thicker than apple butter.
  4. If you put it in hot jars with fresh lids and bands it will seal and you can put in your pantry.
  5. If not canned it will hold in the refrigerator for several weeks.

I LOVE this! We buy it from the Mennonites general store not far away. One of my favorites!


My grandsons really like my slow cooker--apple butter this last summer,but misplaced the recipe. Maybe they would like this one. Thank-you
