How to make it

  • Combine all ingredients in slow cooker and stir. Cook on high until sweet potatoes are fully cooked.
  • Mash or beat with an electric mixer until well blended.
  • This mixture will be a little thicker than apple butter.
  • If you put it in hot jars with fresh lids and bands it will seal and you can put in your pantry.
  • If not canned it will hold in the refrigerator for several weeks.

    What is the shelf life if you can it? Does it need a water bath or pressure can? I gleaned a sweet potato field and would love to make some of this butter, for myself and for gifts.

    Since mid-summer we have packed away (bottled and frozen) 200+ lbs of strawberries, blueberries, pickles, peaches, plums, and salsa. Next, after the pears, it's time for apples and yes, applesauce. And sweet potato butter??? This is exciting. Thanks for sharing and I'll report back later.
